Cream of Broccoli Soup

I'm just sitting at home, swollen after yesterday's removal of two wisdom teeth. It's difficult to eat anything, so after checking contents of my fridge, I got an idea of making myself cream of broccoli soup for dinner. I found a very good recipe on a website Wielkie Żarcie (sorry, just in Polish). The soup came out delicious, soft and easy to eat, even in my state ;) So, it's time for a recipe, with my minor modifications.





 INGREDIENTS:
Basic ones:
500g broccoli
2-3 cloves of garlic
1 spoon of butter
2 bouillon cubes
a glass of milk or couple of spoons of sour cream
spices: salt, black pepper


Additional ones:
Whatever you want: croutons, puff pastry croutons, grated cheese.


METHOD:
1) Dissolve the bouillon cubes in one liter of hot water, and boil the bouillon for a moment. Take off the pot from the stove. 


2) Cut broccoli into florets and then into smaller pieces.
3) Peel the garlic and cut it into tiny pieces.



4) Put a spoon of butter into a pot. When it melts, add garlic and fry it.
 
5) Add broccoli to garlic and, constantly stirring, heat them up for a few minutes.



6) Pour bouillon to the pot with broccoli soup (it should cover the broccoli, and be even 1- 2cm above their level ) and simmer for 20-25 minutes.


7) When the broccoli is already soft, take off the pot from the stove and let it cool down for a couple of minutes.
8) Blend the soup with blender, then season with salt and black pepper.


9) Add a glass of milk or a few tablespoons of cream (thanks to it, the soup gains interesting flavor and color).
10) Serve with additional ingredients ...


And here comes a full discretion... because you can add e.g. croutons,
puff pastry croutons, a bit of grated cheese ... I read somewhere that the cream of broccoli soup goes perfectly with roasted sunflower seeds or almonds. Because of my today's limited ability to bite and chew, I cut a slice of toast bread into pieces and added a bit of cheese. And what will you serve your soup with ? :)
