Cream of Mushroom Soup

After yesterday's success with the cream of broccoli soup and admiration from my husband, I decided to keep up the momentum and prepare another cream soup, now of champignons. I love champignons! And mushroom soups, especially those made by my grandma, I've eaten eagerly since my childhood. Again, I found an interesting recipe in the Internet, this time on a site agatagotuje.pl (Polish only), I modified it a bit and cooked the soup today. M. wolfed down, took two second helpings and said that he won't make soups anymore. I will definitely not agree to this, as I love his soups! However, frankly speaking, cream of mushroom soup came out delicious. Do you want to try? Let's get started! :)


INGREDIENTS:
500g champignons
2 middle-size potatoes
2 middle-size onions
2 bouillon cubes (preferably mushroom ones)
125 ml of heavy cream
1 spoon of butter
1 teaspoon of oil
spices: salt, black pepper, marjoram, chilli powder, nutmeg, parsley



METHOD:
1) Peel the potatoes and dice them.
2) Dissolve the bouillon cubes in one liter of hot water, add potatoes and keep simmering.



3) Peel the onion and cut it. 
4) Wash the mushrooms (peel if needed) and slice them (together with stems). 


5) Warm up the oil on a frying pan. Then, add butter. When it melts, put onion and fry it until it turns golden. Add mushrooms.


Season everything with salt and black pepper, mix and cover. Stirring from time to time, wait until the mushrooms are nicely fried. Take off the frying pan from the stove.



6) When potatoes are soft, put everything from the frying pan to the pot. Season with salt, pepper, chilli powder and marjoram. Stir and cook for the next 5-10 minutes. Take off the pot from the stove.


8) Blend the soup with a blender.


Then, pour cream, add a bit of nutmeg and still blend for a moment. Season to taste with salt and pepper.


9) Serve the soup dredged with parsley. 


For decoration and taste purposes, I put on the surface of the soup, slices of a champignon browned on a frying pan (without any oil or butter).


As an addition to the soup you can use pasta, puff pastry croutons or slices of brown bread.

Believe me, the soup is finger-licking good! :)
