Muffins with vegetables and sausage

I'm starting the series of my variations on the muffins with a recipe for my Husband's favorite muffins: with vegetables and sausage. For some reason, whenever M. brags about me and my cooking skills, he always mentions those muffins. Well, some say that the way to a man's heart is through his stomach, and for sure there is something about it ;)

Muffins with vegetables and sausage are perfect as: lunch, dinner, supper, snack, dish for a picnic or guests' visit. A great thing is that every time a combination can be different, everybody can choose what she/he likes or dislikes, and taste will still be good.

The starting point is of course the basic recipe for muffins and the rest depends only on imagination, taste and content of the fridge. I will show you an exemplary combination, based on muffins I have done recently. Usually I just check what ingredients* I have and what I would like to add on a particular day ;)



INGREDIENTS:
"dry" ones:
2 glasses of flour
2 full teaspoons of baking powder 
1/2 teaspoon of salt
spices (salt, pepper, herbal pepper mix,  herbes de Provence, chili)

"wet" ones:
2 eggs 
1 glass of milk 
100g butter or margarine

additional ingredients
1/2 medium size onion
1/4 pepper
1 sausage
1/2 tomato
50 g cheese
3-4 champignons
(* great ingredients are also: a couple of spoons of canned corn and/or peas, quarter of a cucumber, a slice of zucchini,...)


METHOD:
1) Melt the butter/margarine in a small pot and leave it to cool down.
2) Dice all the additional ingredients. The champignons can be left raw or fried lightly. 
3) Put all the "dry" ingredients into one bowl, and mix them. In another bowl mix all the "wet" ingredients (eggs, milk and cooled melted butter).
4) Pour the "dry" ingredients into the bowl with "wet" ones. Add the additional ingredients.

Mix everything with a spoon (!). Actually you should not mix it too much (even if there are still some flour clumps, it's OK), just so that all the ingredients are combined; it's - rumored - for the benefit of taste ;)
(If it seems that the mix is too dense, you can still add a couple of spoons of milk.)

 
5)  Put one muffin-paper-form into each "hole" in the muffin pan. Pour the muffin mixture into each muffin-paper-form - up to 3/4 of its height. 


6) Bake in 190-200°C until muffins turn golden.


Of course you can always prepare a vegetarian version - without the sausage.
