There was a time when we ate muffins very often. I don't even remember from which site I took the first recipe, for muffins with chocolate. I have experimented a lot since then ;) In Berlin i don't make muffins so often, but I still like them :) In this post I will present the basic recipe. It is really easy and nice, there is no problem with scaling it (e.g. I often make muffins from 1.5 portion). I will gradually present my different variations. And I encourage you to play with your own ideas :)
INGREDIENTS:
"dry" ones:
2 glasses of flour
2 full teaspoons of baking powder
1/2 teaspoon of salt
"wet" ones:
2 eggs
1 glass of milk
100g butter or margarine
additional ingredients
METHOD:
1) Melt the butter/margarine in a small pot and leave
it to cool down.
2) Put all the "dry" ingredients into one bowl, and mix them. In another bowl mix all the "wet" ingredients
(eggs, milk and cooled melted butter).
3) Pour the "dry" ingredients into the bowl with "wet" ones. Add the additional ingredients. Mix everything
with a spoon (!). Actually you should not mix it too much (even if there are still some flour clumps,
it's OK), just so that all
the ingredients are combined; it's - rumored - for the benefit of taste;)
4) Put one muffin-paper-form into each "hole" in the muffin pan. Pour
the muffin mixture into each muffin-paper-form - up to 3/4 of its height.
5) Bake in 190-200°C until muffins turn golden.
