Letcho

The days are going by incredibly fast. Finally, I have some time for posting recipes.

Already in high school, whenever I stayed at home alone, I made myself a full pot of letcho. And it wasn't because I could not prepare anything else :P It was because I adore letcho. Today I'm going to give you my recipe. It is very easy, so even beginner cooks should have no problems with it.

INGREDIENTS:
2 onions
6 peppers (preferably in different colors)
5 - 6 tomatoes
3 barbecue sausages (or thick wieners)
salt, pepper, chili, oil

METHOD:
1) Peel the onions. Dice the onions and peppers.
2) Put the tomatoes to a pot, cover them with bowling water and leave for a moment. Then pour the water out, peel the tomatoes and dice them.
3) Peel the sausages / wieners from casing and dice them.

4) Pour some oil into a pot (so the whole bottom is well covered). Warm it up.
5) Put the onion into the hot oil, keep stirring and frying until the onion turns golden.
6) Add sausage, mix and keep heating it up.
7) When the sausage is fried, pour the diced pepper into the pot. Salt it lightly, and mix the ingredients.

Reduce the heat and cover the pot. Stir from time to time, making sure that nothing is burning.
8) When the pepper is rather soft, add tomatoes. Season everything with salt, pepper and chili. Mix the ingredients and keep simmering them.
9) When all the ingredients are soft, and there is quite a lot of juice from vegetables, season the letcho to taste and simmer still for a moment. Letcho is a Hungarian dish, so it should definitely be spicy.
10) Serve with bread. Bon appetit :)

* Sometimes I add also diced zucchini. I pour it shortly after the pepper.

I like the most reheated letcho, e.g. on a second or a third day. It gets then even more taste. However, usually there is not that much letcho left for those days, because already on a first day I eat it with a great appetite ;)
